Peanut Butter Cookies
These were one of my contributions to our Super Bowl potluck yesterday.  It was the first time I had ever attempted PB cookies from scratch, but this was the best PB cookie I could ask for—great texture and consistency, full of peanut buttery deliciousness, and super easy to make.
1 1/2 c wheat flour1/3 cup oats1 tsp baking soda 1/4 tsp salt1 c chunky peanut butter (I used TJ’s unsalted organic)1 c brown sugar1/2 c butter1/4 c honey1 egg1 + tsp vanillaChocolate addition of some sort, I chose TJs PB Cups.
Combine flour, oats, salt, baking soda, and salt.
Cream butter and brown sugar together with a hand mixer, add egg, vanilla, PB, and honey.
Combine with dry ingredients.  Chill the dough.  Roll into balls of your desired cookie size and bake in a 350ºF oven for 8-10 minutes.  Press in your chocolate addition while the cookies are still warm.  Let cool and enjoy!
